Caramel Pear Skillet Tart

2 pounds pears
3 tablespoons Fruit-Fresh® Produce Protector
2 quarts water
4 tablespoons unsalted sweet cream butter
2/3 cup sugar
1/4 teaspoon ground cinnamon
1/4 cup ground pecans
1 (9-inch) prepared pie crust

Preheat oven to 400 ° F. Combine Fruit Fresh® and water in a large bowl. Core, peel and halve pears. Cut each half into four wedges. Submerge pears in solution. Drain and set aside.

In a large 9-inch cast iron skillet, melt 4 tablespoons butter. Add sugar and cook over medium heat, stirring constantly, until the mixture reaches a golden caramel color. Stir in cinnamon. Remove from heat. Arrange pear slices in a circle on bottom of skillet. Take care not to touch sugar mixture as it is very hot. Continue stacking slices to fill gaps. Dice any remaining pears to fill in the center. Sprinkle ground pecans over pear slices.

Place pie crust on top of pear slices in skillet. Trim over hang of dough; tuck dough between pears and skillet. Bake at 400 ° F for 50 minutes or until crust is golden brown. Remove from oven and cool on a rack for 5 minutes. Place the serving dish over the skillet and quickly invert tart onto plate. Yield: about 8 servings.
